Starbucks Copycat Coffee Cake

I am so not above using a cake mix for a quick, satisfying dessert.  Picky Palate and Home Based Mom both blogged about this delicious Starbucks Copycat Coffee Cake and I decided it was finally time to give it a try. I had a few problems while baking. I think I added the crumb topping too early, before the cake was just set, and because of this the insides of the cake started to ooze out of the pan. Next time around I will be sure to cook it a bit longer. Remember, every oven is different!

Starbucks Copycat Coffee Cake
Makes one 9"x13" pan, about 12 servings

1 Box Yellow Cake Mix (plus ingredients on back of box)
2 Sticks cold salted butter
2 1/4 Cups flour
1 1/2 Tablespoons cinnamon
1 ¾ Cups sugar
1 1/2 Tablespoons vanilla
Powdered sugar (for dusting)

1. Preheat oven to 350-f degrees.

2. Prepare cake mix in large bowl according to directions on box. Spray a 9"x13" pan with non-stick spray. Pour batter into pan. Bake at 350-f for 15-20 minutes or until center is just barely set. (20 minutes was not long enough for my cake to be set)

3. While cakes are baking, prepare crumb topping. In large bowl of electric mixer combine, butter, flour, cinnamon, sugar and vanilla until all crumbly.

4. Immediately after cake is removed from oven, break crumb topping into marble size pieces with fingers, sprinkling over top. Put back in oven and bake an additional 10-15 minutes (topping will begin to look a little less wet/raw). Let cool fully then dust with powdered sugar, using a sieve.

5. Cut into squares and serve.
